The hardest thing about the SCD is baking. We have tried a lot of recipes - some good, some bad and some amazing. My husband was really in the mood for cookies the other night and I've been starting to think about finding a great Christmas cookie recipe. He found this recipe and made some adjustments to make it a little spicier. The resulting cookies were definitely in the amazing category. They are soft, sweet, chewy and gingery. These will definitely be a staple this holiday season!
Here's the recipe:
4 cups almond flour
1 stick butter, softened
1 egg
1 teaspoon water
1/2 cup honey
pinch of salt
1/2 tsp allspice
1 1/4 tsp ground ginger
1 tsp ground cloves
3/4 tsp cinnamon
1 tsp baking soda
Cream the butter, egg, water and honey in a bowl. Mix the dry ingredients and add them in. Place dough in fridge for a few hours or freezer for 15 minutes. Roll the dough into 1-inch balls and space out on a cookie sheet covered in parchment paper. Bake at 350 degrees for 8.5 minutes. He baked them on the rack just above the middle, and they were PERFECT.
