A few weeks ago, we pulled into the parking lot of a nearby grocery store. They happen to share the lot with a Kentucky Fried Chicken. It has been years since my husband or I have eaten at a KFC but the smell got us both a little excited and we talked about how we shared the same horrible fantasy of ordering a bucket of chicken. Of course, there is pretty much nothing on the KFC menu that you can eat on the SCD so we quickly moved on. Recently. my husband asked me what I wanted for my birthday dinner and my mind went to fried chicken and then quickly jumped to an SCD-friendly dish that my grandpa and, subsequently, my dad used to make. When I mentioned it, my husband emailed my dad for the recipe and then made it for my birthday. This is what my dad had to say:
Take a whole chicken, cut up or whichever chicken parts you desire (my husband bought a large package with nothing but chicken legs). Bake the chicken for 35-40 minutes at 350 degrees. Drain the drippings into a bowl and thicken with finely grated Parmesan cheese to make a paste. Spread the paste onto one side of the chicken and broil for four minutes. Turn the chicken, coat the other side with the cheese mixture and broil until the skin is brown and crispy, about four to five minutes more.
It was just as I remembered my dad making it and, in my opinion, is far superior to fried chicken!
